I've got a real thing for choral music, especially Requiems and Masses.

Mozart - Requiem Mass in D Minor
Bach - Mass in B Minor
Faure - Requiem
Beethoven - Mass in C Major

Bach is amazing... last year I spent a long time listening to The Well-Tempered Klavier - a collection of pieces in every key for piano.
