Yeah you can set up whatever you want
and save it as a new template
just look at how the existing ones are set up (folders etc; I can't remember off the top of my head and I'm on a bus right now so can't check) and follow that lead
my default one is pretty heavily customized like this

If you are removing a limiter for finalizing purposes you generally WILL have clipping (because the signal is no longer limited to stop at or before 0dB) which in turn will result in you having to pull down the master. I see no flaw in this thought process

Oh Yeah the other thing I do is manually reset it at the END of the automation. Like at the very beginning of the next bar following the automation. Not sure if i'm reading correctly but it looks like you're frustrated that the value won't reset to a certain point after some automation? There are probably other ways to do it but I personally use reset patterns. Just make one pattern and set the value you want the knob to reset to in the pattern ...
