For me 'Super Sharp Shooter' the Ganja Kru / DJ Zinc classic always does it. I remember hearing it in a club for the first time at the Ninja Tune night in the Blue Note in Hoxton and it went off like crazy. They teased and teased the intro (The S, the U, the P, the E, the R) for ages before finally dropping it to ludicrous effect.

Also love 'The Box' by Kemet Crew - 'cos I used to dig the Hellraiser films when I was a kid!
