As i've been living in Thailand for a while i would like to add my favourite dish
Laab Moo
Ingredients:
500g Pork Mince
200g Pork Liver (thin slices)
Bunch of Mint (chopped)
Coriander (chopped)
4 Shallots or 1 large red onion (sliced)
2 spring onions (choped)
Fish Sauce (4 tbsp or to taste)
2 Limes (squeezed)
10 green chillis (chopped)
4 dry roasted red chillies (chopped)
Toasted crushed white rice (50g)

Method:
Dry fry the Mince and liver (add a little water if it sticks), take off the heat and mix with the mint, coriander, onions, chillies, fish sauce and lime juice.
Add the uncooked rice to a hot wok and stir untill it turns golden brown. Put into a pestle and morter or spice grinder and grind to a rough powder.
Sprinkle the powder into the meat mix.
Serve with more rice powder and herbs sprinkled on top.
Eat with sticky rice.


Can also be made with raw beef, duck or pork offal.

Do people in the middle east all eat the same thing?
Now i do love this food but it doesn't matter if i go to a Lebanese, Syrian, Egyptian or Israeli restaurant; they all have the same dishes on the menu (slight variations in names)

no they don't that's just teh mezze.

not at all, especially in syria and lebanon there are loads of meals. but it's quite complicated too cook them. there is def a much bigger variation than in the average european kitchen as i would say...

Give me some names. I love long complicated dishes. I quite often cook meals which take 2 days to complete.

Welsh Rarebit: The most elaborate cheese on toast ever

Two slices of bread
Big chunk of Cheese (cheddar usually, but any kind of cheese that melts well will do)
Big spoonful of butter
2 teaspoons Flour
bit of Mustard
splash (or three) Beer
Worcester Sauce
Pepper
Splash of milk

Basically, lob everything but the bread and the beer into a saucepan and heat it up gently until it thickens and turns into a gloopy paste, making sure you stir it thoroughly. when it gets consistent and thick, add the beer and stir it in really well, and I like to add a bit of milk to help it stir in too. Heat it for a bit longer (dont let it boil or bubble too much) turn off the heat and keep stirring it for about a minute or two. Stick it in a bowl and let it cool and set for a bit.
Then...
Toast one side of your bread. Spread Rarebit mixture onto untoasted side of bread and grill until golden brown
