Dinner party meal ideas...

Post by faust.dtc » Thu Nov 11, 2010 11:49 pm

I'm having people round for dinner tomorrow.

Does anybody have any good ideas for a starter, main and dessert?

Thanks

Damn, that is pretty much what I was thinking 64.

Was gonna do chilli and lemon prawn or salmon. Chicken filled with a soft cheese, wrapped in proscuitto with roasted veg and I was gonna make a cheesecake.

Still open for ideas though as I wanna try summin different.

get some cumberland whirls, marinade in your own home made jerk marinade, cook and serve with mashed sweet potato, and some sort of bell pepper salad

for main some nice beef, good gravy and potato gratin dophinoise.

dophinoises is easy.

1. butter a dish and slice 1 clove of garlic per 2 people, put the garlic in the bottom of the dish.
2 thinly slice potatoes and lay them out in the dish, making sure to salt and pepper each slice as it goes in.
3. make a mixture of 1/3 milk and 2/3 cream - pour that over the potatoes and cook in the oven till its all golden and shit.

simple and super nice!

Order pizza.

Inform your guests pizza has been ordered and collect cash to cover it.

Sorted.

Starter -
Marinade an eye of beef for a 5 days.
marinade ingredients
2 tbsp of Coriander seeds
2 tbsp black peppercorns
4 dried chillies (whole)
two pieces star anise
1 large piece of ginger sliced
8 cloves of finely chopped garlic
2 bay leaves
Cinnamon stick
zest and juice of 4 limes
2 cups of honey
4 cup of soy sauce (dark but not the expensive Japanese style, Chinese standard)
1 cup sherry

Make sure the beef is completely covered by the marinade

Leave in marinade for 5 days.

Take out of the marinade an hour before cooking, drain off excess liquid and seal the beef, leave to rest for 30 minutes before slicing thinly.
Reduce the marinade and serve as sauce (add more sherry)

An eye fillet of beef should look something like this

Seal it means searing it... And you don't 'cook' it... you sear it, let it stand and then slice it, sealing would take a few seconds on each side...

I was gonna say exactly that lol. fill it with mozarella, garlic and coriander :) serve on bed of rocket, with big bowls of roast veg in the middle.

Dunno how you normally do the chicken, but I stuff it, wrap it, griddle on an extremely high heat for 1 minute on each side then whack in the oven on greaseproof for about 20-25 mins

Special Fried Rice is always good

Literally just fry up whatever you want with some pre cooked rice which has been chilled, preferably overnight.

Bacon, onions, peppers, prawns and some herbs and spices is normally the way forward. Chuck a couple of chillis in there to spice it up a little.
