erm amounts is jsut however you wana do it really, with the seasoning mix i'd probably do equal parts celery/onion salt to half white pepper, you could prob add some sugar in there aswell.
also if you wana go all out you could buy some chinese cooking wine (Shaosing) and throw that in with the soy and chopped veg, goes in bare other chinese recipe aswell
with amounts its worth just making a little batch first, tasting then seeing what you think it needs, be it more/less seasoning, more of x ingredient, i haven't got it nailed yet, but i know its how they make em at the Yang Sing (where my dad works) so eventually we'll get it right!

The key to a good stir fry is having everything pre cut, it should take no more than a couple of minutes to cook.
Oh and Oyster Sauce, i fuckin love that shit.
I shall add a recipe soon.

fuck the shit they use in thailand, they cook in like peanut oil or rapeseed or somthing, i HATE that smell along with condensed milk
Flames are required. If the pan doesn't burst on fire when you add the chicken then you're doing it wrong. Heat that fucker up till the colour of the pan changes.

^^^^^ I know what you mean about the gas flame issue. However i find that if you heat the wok for a good 20 minutes it has the same effect. That coupled with a good caste iron pan that holds the heat.
I'm not sure about your issue with the oil though. The oil the Thais use has very little smell or flavour, it's pretty damn neutral as far as cooking oils go.

when i was there i was trying to work out the sweet smell in the streets, n it wasn't condensed milk but i got it everytimg i walked past the stands, im sure it was peanut oil they were using which has that smell. i could be completely wrong though and it was just the condensed milk smell

Yeah it's probably the condensed milk or coconut milk dishes. Plus they cook lots of desserts on the street all of which are stupidly sweet. made some italiano meatballs the other day, well simple recipe but i think it was bangin
meatballs:
500g mince beef
one egg
a slice of bread for breadcrumbs
a healthy sprinkling of parmesan cheese
salt & pepper
Gravy:
tin of tomatoes
tin of tomato puree
1/4-1/3 bottle red wine
one white onion (medium size)
one garlic clove
mushrooms
lemon juice
dried oregano/basil
bay leaf
chopped fresh parsley
butter
cup of olive oil
salt & pepper
sugar
piece of piss really
blitz bread for crumbs, add to meat, add egg, sprinkle parmesan and season healthily whilst you break down the meat mix with a wooden spoon, to make them into meatballs i tried something which works quite well, i got a plate, oiled it with my hands and started making the meatballs, set them on the plate
the gravy is simple: very healthy glug of olive oil, 20g butter, medium heat, add onion, cook till translucent, add garlic, fry for a few seconds, add meatballs, reduce heat slightly, cook till meatballs are browned all over, add wine and turn heat right up to cook off the alcohol, add tomato stuff/herbs/bay leaf.
bring to boil then reduce heat to simmer. salt and pepper to taste, add lemon juice and sugar to make the sauce taste how you want aswell. add mushrooms. put lid on. leave for 20mins check on it, season again if it needs it. leave for another 40mins. you can add some more butter at the end aswell if you want a proper meaty gravy. when you're cookin your pasta take the lid off and leave on lowest heat to thicken. add fresh parsley right at the end, stir, let it stand and then eat.

Anyway, I'm starving, so I've decided to make my Thia lemongrass soup. Thought you guys may like it, or want to alter it to your liking.
Ingredients:
3 cups of water
1 can of chicken stock
1 lemongrass stalk (cut into 3rds and smashed in)
1/4 cup diced onion
1 teaspoon of salt
1 teaspoon coriander
1 tablespoon lime juice
1 tablespoon olive oil
2 tablespoons fish sauce
1 cup of straw mushrooms
chili pepper (as much desired)
2 tomatoes (cut into quarters)
Directions;
-Combine water, chicken stock, lemongrass stalk, onion, and salt into pot; and bring to a boil.
-Once boiling, turn heat down and let it simmer for about 20min.
-Next, add lime juice, olive oil, fish sauce, coriander, mushrooms and chili pepper.
-Cook for another 5-10min, adding the tomatoes at the last few minutes to ensure a firmer texture.
-Serve it up and enjoy
You might want to add ginger. I'll pass though.

Anyone got a good recipe for a Caribbean style chicken curry? Part of my rent is to cook the fam a nawty meal once a week, and every relevant cookbook I've found thus far involves Levi Roots gleefully emptying a bottle of Reggae Reggae into what appears to be a standard meal from another cuisine

BASIC BACON TURKEY CHEESE OMELET:
You need:
1. 2 Eggs
2. Cheese of your liking
3. Deli Sliced Honey Turkey
4. Pieces of bacon (bacon bits will do)
5. Salsa (or anything else that goes well with eggs, except jelly)
6. Frying pan
7. Cooking Oil
8. Spatula
Directions:
-1. Cook Bacon to desired amount of crispyness (not too crispy though)
0. Pour Cooking Oil on Pan.
1. Crack 2 raw eggs and pour in pan. (make sure stove is NOT on)
2. Stir eggs in pan till the eggs have little to no white left (only the yokey yellow)
3. Turn stove on low, let eggs cook till they are somewhat firm and spongey.
4. Put Cheese on left side of egg.
5. Shred trukey with hands and place on slowly melting cheese.
6. Place Cooked Bacon pieces on turkey
(optional) Place salsa on turkey
7. Fold Right side of egg over left and press firmly around edges till both sides of egg stick together.
8. Flip omelet till both sides are yellowish gold.
9. Place on plate, pour salsa on omelet if you did not put salsa in omelet.
Enjoy.
