Bread is made differently everywhere though. We made 2 kinds: one normal and one with brown sugar. Not a lot though.

well to be fair, on a philly cheese steak the cheese isn't the hero of the sandwich, it's the beef and veggies. The cheese is really just there to help paste it all together and add a tad bit of moisture for what can be an othewise dry sandwich.
