I don't know of any but I usually do that with waveform choice and maybe reverb, saturation and distortion work as well,

the Mequalizer has a cool harmonic function on it too. I don't really understand it, but I was reading an article in some magazine (forget which one) called "mix rescue" or something that they do every month, and the guy used that equalizer to take out some harmonics from the guitarist playing the wrong chord. I just stick with the exciter in logic though. if you can find a tape/ tube saturation plugin that works good too. TAL has a decent one, might not be what you're after though.

Try camel space. Not only does it have a really nice saturator and exciter, but it's also got a nice gate sequencer, delay, reverb, and some other nice effects. It's a plugin I use on just about every sound I make.

Absynth 5. Its waveform editor has a 'spectrum' tab that allows you to add/remove harmonics.

each vertical line represents a harmonic, the first being the fundamental. The bottom set of vertical lines are the phase of each harmonic, changing stuff in this tab will alter the wave in the wave tab, in the standalone version you can split one of the tabs off as a window and change one screen to see how it alters the other in real time, even in playback, so you have visual and auditory feedback.

well starting out with a piano sample will give you overtones which are harmonics, as long as you don't filter them out. But doesn't the RES knob on (just about any) synth add various harmonic freqs?
