Oxygen doesn't have to mix with butter in order for oxidation to occur
- oxidation is essentially rusting
- so any place where oxygen can make contact/ie the exposed surface - can oxidize
reduce the amount of actively available oxygen and minimize the surface area and you have protection against spoiling
