correct me if i'm wrong but doesn't water contain oxygen? so technically the water should spoil it...or am i missing something here?
even if it contained free oxygen (which all water does to be fair) water cannot mix with lipids and fats such as butter.

u buy the 4 pack butter

pull one out, put in the dish, set on the counter

other 3 are left in fridge for baking

when the counter butter runs out, replace w/ one from the fridge, when fridge butter gets down to last stick

replace fridge butter w/ new 4 pack

Oxygen doesn't have to mix with butter in order for oxidation to occur
- oxidation is essentially rusting
- so any place where oxygen can make contact/ie the exposed surface - can oxidize

reduce the amount of actively available oxygen and minimize the surface area and you have protection against spoiling
