you need to go the enviroment and go to multi instruments and then add your instruments ie if you have any sound modules and add your quicktime synth,rewire etc
when you have done this you go back to the arrange page and add midi tracks and you should be able to hear your midi...

or via automation-- assign quick automation.
or via the synth itself, if it's the es2 or exs24-- just put in which CC# your midi controller is sending in the dialog boxes in the router section of those plugs.
