I agree visuals can be distracting sometimes, but like with any elements of a venue, they should all combine together to compliment the night. We have a resident VJ "Midi" that usually plays at my Techno night Joy.Pad in Bradford which goes down really well, and he has also played a few times at R:evolve (the night I play dubstep at in Bradford and Leeds). As long as you project the visuals in the right place it can aid the night, such as the custom visuals that myself and Midi create which use elements of photos of the DJ's that are playing and a lot of graphic design based on style of the flyers and the night. This helps advertise the night to new comers and people that wander into the venue without knowing what the night is.
We project and display visuals in the seated area of the bar for the casual drinkers and people chilling out, but have also played around projecting onto the dancefloor. You want to make sure the visuals add to the atmosphere rather than distracting people, so ideally you should have the visuals next to or behind the DJ where everyones attention will be drawn.
A really nice technique ive seen in large venues is projecting from the back of the stage area through hanging mesh screens, combined with smoke machines it looks like the visuals have depth, almost floating mid air above the dancefloor. Example of this is at Leeds Uni, looked good when Skream and Benga played, although the visuals were really wierd (clips from some black and white film with loadsa freaky lookin people and midgets dancing on a table in a circus!! haha wtf).

Visualising dubstep is something that ive been working on recently, creating a music video for my brothers remix of the Lloyds TSB advert tune. Its all about representing the feeling of the bass somehow, which I am going to do in the video by making the falling snow distort with the push of the soundwaves from the speakers, although the clip I have online is just a teaser made with screenshots because the video is not finished yet.
