Making assumptions at the start of a plan is pretty standard procedure. An "assumed 100% risk" doesn't imply "IT WILL DEFINITELY HAPPEN", it implies that the company should prepare for the risk as if it was definitely going to happen. Epidemics and pandemics *always* occur within human populations from time to time, so you assume that it will happen.
Also, most massive companies are so broadly invested and connected to the free market that, yes, they will make money out of epidemics, just as they'll make money in times of a healthy workforce. It's how sensible business strategies work.
