s'all about roasted sweet potato, although generally i would probably put that with a huge batch of sausages, which probably don't appeal to the vegetarians/vegans 
ALSO, griddle asparagus, put in bowl, lemon juice and olive oil, a sprinkling of big bits of rock salt on top, buff salad
also another favourite, cube tomatoes and onion to taste, wack in bowl, nice balsamic vinegar (the really thick belaz one is baaaaaaaaaare good, proper sweet and gooey yet also sour) and then decent olive oil, TONS of pepper, and salt as much as you want, fuckin buff
gives you the shits if you have too much though

wow a lot of good ideas in here. thanks guys for posting them....the potatoe and veg smashed together with egg and cooked up might just be my new fav snack!!!! i might even go try to do it up right now!
for me, i must say that i can cook some mean veggie stir fry and tofu fried rice...love the oriental and mexican dishes for vegetarians . rice and beans is standard. as well as typical italian dishes.
ive been into cooking lately. and want to try some new things ive never attempted to cook before. also giving me a better range of choices when i am hungry cause lately ive been on the easy tip of pasta and sauce or pizza or something equally simple and blah...

so i just made this....i didnt have eggs...so i had to make due with what i had.
steamed broccoli, baked potatoes, cooked onions and fresh garlic and a pinch of salt and pepper....blended it up together nicely and plopped it in a pan with some oil...put some shredded cheese on top...BAM so good. reminds me of some kind of poor mans food. but hey.....im eating happily and getting full as hell and this prob cost me a whole 2 dollars and some change to make?...amazing.

I've just had mashed potato with curry (peas, tomatoes, orange peppers and peanut butter)
My favourite quick meal is noodles fried up with onions peas and mushrooms.
We've been doing roast veg in the oven: cherry tomatoes, 3 whole garlics, onions peppers and mushrooms, cook it for so long the veg starts to burn, by then the garlic is sweet and caramelised, have this with roasties and rice!
