Fry up some onions for like 10 mins until it's properly browned.

Add garlics

Chop up the sausages into like little bits. Don't worry too much about chopping it up, though the "natural casing" shit can be quite rubbery (i.e. sheep's intestines) the sausages all break down into mush anyway. Fry for a few minutes.

Add mushrooms

Add two diced fat tomatoes

allow to boil and break down and release their juice

add a squeeze of tomato purée

add 3/4 pint of stock (i usually use oxo green vegatable stock cube)

salt

peper

oregano

fresh basil

fresh thyme

fresh rosemary

sage

a dash of lee and perrins

a pinch of paprika

mix it all up, bring to boil, add fat slug of red wine and let to bubble bubble for like 15 mins

once the pasta/spaghetti is cooked, add it to the pan of sauce and cook it for 5 mins so the pasta soaks up the juice.
