white > red. and it only tastes like acid if it's warm. you should put your white wine in the refridgerator. i have been known to use ice cubes with warm white wine on occasion. it's better than warm if you don't have time to refridgerate

The idea is that you have the grapes pre-frozen.

I've never been in a situation where I need to drink warm white wine quickly as I'm running late for a train. How often does that crop up? It seems pretty specific.
