most synth/multi-sample sounds don't need EQ'ing, maybe a bit of shelving or shaping and that is all you ever really NEED to do cos the factory have removed any harmful/unpleasent freqs before hand.
When using freshly recorded instruments/vocals, that is probably the instance you'll need to use most of ur EQ'ing skills. As for ur tracks sounding "2d", try compression after to bring out the track if you feel it looses its pressence or use a stereo imaging plugin to give the sound space in the stereo image.
