That'd be nuts. I went to one in Shibua that shot a little train-like plate on wire down the row to you. The quality was better than the usual type because there's far less waste or atmospheric exposure. That was in Shibuya, I like the normal places best though (i.e. where you sit at a counter and order to the chef in front of you) . I actually prefer sashimi to sushi...
