Went to the Indian round the way from mine one time, first time I'd ever been to this particular joint. Anyways, I order the phaal and he's asking me if I'm sure, saying "even I can't eat this curry". Was the first time I'd ever eaten phaal, and it nearly brought me to my knees. Kept ducking out to the kitchen for a spoonful of ice cream to save face, rofl. Had another for tea the day after though, it's just too good - phaal on a garlic naan and no rice.

Yeah the Phaals a lot, only ever had one as a takeaway - its all about flavour as well but done well you can still have some burn. The Thai's do it best, different "notes" of chilli's.

My brother's wife is thai and she cooks like a fucking goddess. Most of it is spicy and awesomely tasty. But one day she made this thin mushroom soup. It was supposed to be a sort of side dish. First taste was instant eye-watering badness, then the mushrooms took over the flavour for just an instant before the fire came back. Then - much like a good vodka - after swallowing there was peace for a moment, until BLAM! just when you thought it was all over someone poured lava into your mouth.
Literally the craziest hottest thing I've ever had. I have no idea if it was chilli or mustard or mace (she still to this day refuses to tell us the recipe) and to be honest I reckon it was all three, but it was mental, in a good way.

TBH it varies in different houses and a lot don't bother making the hotter ones like Paal (aka Phaal Pal). In some a Vindaloo is really hot and in others the Madras is hotter.
I've been told about a Tinderloo by a Chilli madman (snorted mad dog in a pub, crazy) and he thought it was hot but I might try one tonight if I can find it.

I eat that soup once a week. The version i've been eating recently also contains Flying Ants, their eggs, fermented fish and bamboo. The fire in Thai food is unique, it hits hard then disperses rather quickly only to return unexpected with a secondary booooooooooooooooooooooooooooooooooooom. I do fuck up my insides quite often living in Bangkok.
If anyone wants to appreciate real fire they need to come to Thailand and eat Som Tam, a Papaya salad which is not for the faint hearted.
