I havent been making my own garam, i go to an indian shop for that, what is it? just a mixture of spices? It is fucking mental how much onion goes into them! Yeah Garam Masala is a spice mix. Good to put in the end of the cooking process to add a boost to the curry. Here's a recipe which i haven't tried but looks decent http://www.ochef.com/r75.htm
Also buy some Asofetida, it comes in a small yellow container and you can buy it from most indian/pakistani groceries. It smells like rotten eggs but brings out an amazing flavour when you fry it with the onions (1 tsp)









awesome cheers, will look out for it. My local one doesn't have a huge selection unfortunately as it's a chinese supermarket with a little indian section in.
