minus-seven until the drop, then a sudden shift to plus-three.

wrong.
plus four for 4 bars after the drop, THEN down to plus 3.

I play the old ones faster and the new ones slower so as to give them psychological difficulties
I prefer the accelerando approach from barely moving to PCPgabba within the bar if possible, stops the crowd getting complacent.
And Bedward and Subframe are both right, but in slightly different ways. I'll do a pie chart in an effort to explain

You both got in there before me. Twats..
I find it better when you play dubsstsssstttttssstep with a really thick layer of hardened ear wax spread over the record. It really make the dance feel the force.....BOSH drills help if you want the AFX style effect.

sometimes just let the plater sit still, close your eyes and imagine turning it on at top speed. But dont do it. THen think about all the different universes where your record is playing at everyspeed, or string theory or some shit.

slower than most, pitched @ 0% most of the time, try to keep it below 140.
same story as DnB really, shit's been getting faster for years.

I've started pitching some of the non-halfstep stuff down to mix with older garage but some of it might be +8 on one deck and -8 on the other which is a bit rubbish if amusing at times.
