What are some useful herbs and spices to always have around the kitchen?

Salt and pepper, sounds obvious.

Depends what kind of food you eat. Just build up a collection. Start with mixed herbs and italian seasoning. There like the cooking equivalent of those starter decks of Pokemon cards you used to get.

Tumeric is a good substitute for saffron when cooking indian food.

Also if you can grow a little herb patch in your garden. Unlimited fresh herbs.

Depends what you're cooking but for me:
Garlic, ginger and chillies plus dried cumin, coriander, turmeric and chilli powder / cayenne are essentials, like the bread and butter. Having a spice grinder / pestle and mortar so you can use whole cumin and coriander is a bonus.

Garam massala is often useful - those grinder things you can get with the component parts are pretty good, I think.
After that there's all sorts that are either quite handy or a bit more specialized - fenugreek, paprika, fennel seeds, nutmeg, mace, mustard seeds, white pepper, onion seeds, mango powder, black salt...

Smoked paprika is amazing if you can get it.

Herbs I normally get in as and when I need them. Or grow them and use them a bit at a time. Except dried oregano for beefing up frozen pizzas.

cumin is my favorite..,

mix
a palms worth of honey
3/1 of olive oil to the honey
teaspoon of cumin
large handful of fresh chopped cilantro

and marinate chicken in it for about 20 min
then grill..or bake 8-10 min

simple - is good

Basil, corriander garlic, whole peppercorns, ginger, lemongrass, sea salt, chilli in any shape or form, cinnamon, nutmeg and cloves.

boo garlic powder, nothing beats a proper chopped one (although the lazy in-a-jar stuff isnt bad)


dried-wise, basil and chili powder are the ones i use most.

always got a thing of fresh parsley and tarragon on the go in the fridge too, mediterrainean style
