I usually get the kick snare going first as the basis for whole tracks central rhythm, then use hats/percussion to play off the kick snare.
Also maybe stay away from ultrabeat if your want punchy drums and start with learning the exs sampler - if you like working with a step sequencer for drums try guru.
And read this thread.

Ultrabeat is more effective than exs24 for drums by far. I don't know what your punchy statement is about either.

drums on ultrabeat are pretty bad because the ultrabeat fades in the sample even if you have the amp envelope on 0.
mostly just use the esx24 and multichannel output it so you can have control of your samples for eq and further processing.
Also when he means punchy hes talking about the transient from the sample.
hope this helps.

Dont get me wrong i love ultrabeat and used it for ages until depone mentioned how it fades the beginning of samples in which i had noticed before but only on certain samples. Theres a thread about it on the logic pro forums which was an interesting read.
I know what you mean though, after learning ultrabeat inside out and becoming used to the step sequencer it felt like a backwards step for me trying to write drums in the exs so that why i went with guru which for me has the best of both plus more.
