have yet to catch him live, but Youngsta is a beast on the decks, same with Oneman. Have been lucky enough to watch Joe Nice to his thing up close, that was a treat.

For me (so far) it's been Youngsta and T_!.
Youngsta late last year doing a 3 deck, 2004-06 rare vinyl / dubplate set.

Just stunning.
T_! just gets further and further into the mixing, keeps pushing it and pulls it off when you don't think it's possible.
I really need to see Oneman...
From the mainstream camp, I'd say Rusko always looks like he's enjoying it so much that it's contagious. Nero (not sure which one mixes) are pretty good and lively, double-dropping.
Skream always gets into the spirit as well.

6Blocc, DJ Craze
I'm beginning to think that a majority of dubstep listeners pay attention to maybe about 5 DJ's...sad

No arguments there, but it's 2011, dubstep's been around for several years now. You'd think there might be a few more DJ's to get some credit that weren't around in 2006, it's not like being around that long is a prerequisite to being a good dubstep dj(I'm sure plenty will disagree with that, but I stand by this, it doesn't take that many years to fine tune technical skills and immerse oneself in a musical culture to become a good selector).

Gaslamp Killer, D styles, Daddy Kev, DJ Nobody (gotta shout out the Low End crew), DJ Qbert, Sam XL (last time I saw him play out he was double dropping like a mofo), Nosaj Thing, Youngsta, Skream etc. Honestly a lot of dubstep DJs really aren't that impressive; especially tear out DJs. It gets really formulaic
EDIT: And oneman OMGGGG
