Is there a way to automatically assign a mixer channel to a track when it's added into the step sequencer?

You can either select the number of the mixer channel you want in the top right of the instrument;



Or else when you've got the track in the step sequencer selected, right click on the mixer channel and select Link Selected. Ctrl + L is the keyboard shortcut for this.

I always click the instrument,wav first. Then clck on te mixer track I want it on then hit ctrl L . I like to have stuff spaced out on the mixer to lookcleaner

You can also click the button on the top left of the channel settings and hit "assign free mixer track"
