Other than the increased stereo field, are there other shortcomings to mixing on headphones? And consequently, is the whole headphones problem solved by monitoring at 80-82% stereo width?

Good frequency response in headphones is hard to attain for one. The other big main reason is just that sound needs distance to travel over (thus wave lengths), and you don't get that really with two speakers attached to the sides of your head.

They are however, super useful for checking things like delays, reverbs etc.

This is why open-backed headphones are preferable due to their expanded sound stage.

KOAN used to do his mixdowns on 15€ headphones. (Source: Dodge & Fuski Dubstep Tutorials)
I think it´s really just a matter of learning how your headphones or speakers sound.

I put my hand on my speakers to feel sounds as much as hear them, can't do that with headphones. Plus my ears are in pain after like 30mins

i mix down on bose headphones, as long as you know how to make things sound good you will be fine
