soundflower is pretty good. it's basically a virtual sound card so you can route audio inside your computer from any application:

I've messed about with Audacity but I've never really got on too well with it and it seems to crash the whole time. When I had a pc I used cool edit / adobe audition a lot and knew it like the back of my hand but you can't get that for Macs. I've never really liked any other programmes like Wavelab either. Don't know why.

Wickid program. You can rip from dvd, internet, basically any application, and at any quality. Useful for recording radio shows, like the radio 1's prodigy takeover. (PM me if you want the radio show)
