Gouda is good. I sampled a harvest variety that is only made once a year... delicious!
My second fave is Brie with a mix of olives, minced garlic and balsalmic vinegar on crackers.
Ill have to check out that Roquefort! Good topic.

also try torte de dolcelatte - like an even creamier hybrid.
i tried stinking bishop recently, which was the one in the wallace and gromit movie. nice! pretty strong, as the name suggests.
persie's are a good mature cheddar, a nutty gruyere (great in macarone cheese instead of cheddar), or ideally GOOD stilton with a glass of port can be mind-blowing.
i've never got into camembert, where am i going wrong?
i am suspicious of cheese with fruity bits in it but will give appledore a go.
